This was a slow cooking week for me. That isn't to say that we ate out, but our meals were a little simpler because we had a busy week. A chicken pot pie, coming soon after more testing!, made two dinners instead of one. Marinated flank steak tacos made a quick and easy meal. Tortellini from the grocery with a homemade pesto with grilled chicken pieces from another meal added a little variety. Add one slow cooker recipe that made two dinners, and that was our week of food.
The point is that even when you are busy you can still have home-cooked meals with just a little bit of planning and a well-stocked pantry and freezer. It's easy to order in pizza or go out to a restaurant, but I think it's better to go out when you want entertainment not when you are just exhausted.
My advice is to have a few go-to recipes for those nights when you just don't want to cook or are too busy or too tired or too (fill in the blank). One of our favorites is pasta with green onions - recipe next week!
