Taco seasoning

It's simple enough to buy taco seasoning at the grocery or even specialty stores, but I like to make my own in order to control the amount of salt and sugar in the mixture. Yes, sugar is sometimes added to spice mixtures especially if it is a 'salt-free' blend. I double or triple this recipe and store it for a quick weeknight meal. Ingredients
2 tablespoons ancho chili powder
1 tablespoon chili powder
1 tablespoon cumin powder
2 teaspoons red pepper flakes
2 teaspoons dried thyme
2 teaspoons garlic powder
1 1/2 - 2 teaspoons salt
1 teaspoon ground coriander
1/2 teaspoon pepper
1/4 teaspoon chipotle powder or cayenne, optional
1/4 teaspoon ground cinnamon
Variations
• For a mild version omit the chipotle powder or cayenne. For a spicy version double the amount.
• Replace the ancho chili powder with regular or hot chili powder.
• Replace the dried thyme with dried oregano.
Storage
• Store in a closed container in a cool, dark place. Can be frozen. Use within six months.
Instructions
• Combine all the ingredients and mix thoroughly.
