Sweet and sour vinaigrette

My sister-in-law Vicky Runnoe and family gave me a terrific Christmas gift this year. The Spice Kit & Book by Ethné and Philippe de Vienne, also known as the Spice Trekkers. They are spice traders with a very interesting cookbook. If you are at all interested in experimenting with spices, I highly recommend this book and spice kit. I prepare a lot of green salads, but I get bored with the same dressing recipe. This one is my take on their salad dressing. No special spices are required for my version. There is not a mistake in this recipe; there is more pepper than salt. If you use freshly ground pepper, be careful because it can be very spicy especially for children.

Ingredients
1 teaspoon ground pepper
1/2 teaspoon garlic powder
1/2 teaspoon salt
6 tablespoons vegetable or olive oil
3 tablespoons maple syrup
3 tablespoons cider vinegar
Instructions
• Put all of the ingredients in a bowl and whisk to combine. Alternatively, put the ingredients in a jar and shake.
Variations
• Add chopped onion or dried onion flakes.
• Add a little orange juice or zest.
Storage
• This will keep 3 - 4 days in the refrigerator.
