Steamed green beans
Green beans are a great side dish because they are low in calories and fast to prepare. Cook until your desired texture. Some people like green beans crunchy, others like them limp. I make no judgements! Eat your veggies the way you like them.

Ingredients |

1 pound of green beans, ends trimmed |
1 tablespoon olive oil or butter |
salt, pepper |
Instructions |

• Cut the green beans into 1 - 2-inch segments, if desired. I like the look of long green beans on a plate, but they are harder to eat. |
• In a saucepan, add about 2 inches of water. If you have a steamer, use it, otherwise do without. Add the green beans. Cover the pan. |
• Steam/boil until tender, but not falling apart, about 3 - 8 minutes. Test with a fork. When the fork easily pierces the green beans, they are done. Drain and put back into the pan. Return the saucepan to the heat. |
• Add the olive oil or butter. Season with salt and pepper. |

• Add a dash of lemon juice or zest. |
• Add fresh herbs or dried spices. Experiment with flavors. |
• Use balsamic vinegar instead of olive oil. |
