Pizza sauce
Canned pizza sauce is fine, if a bit salty for my taste. But making your own allows you to control the nutritional content. This is an easy way to add extra vegetables without the kids (or anyone else!) knowing.

Ingredients |

1 tablespoon vegetable oil |
1 onion, chopped |
3 garlic cloves, chopped |
1 cup wine, red for a richer color |
1 tablespoon oregano or Italian seasoning |
1 tablespoon tomato paste |
1 28-ounce can of tomatoes or tomato purée |
Instructions |

• Add the vegetable oil and onion to a sauté pan. Cook until slightly tender, 5-7 minutes. Add the garlic and stir. |
• Add the wine and cook until it has almost evaporated. Add the tomato paste and oregano and mix well. |
• Add the tomatoes and stir. Let simmer for 20 - 30 minutes until thick. |
• Using a stick blender, purée until smooth or to your desired consistency. You can leave it chunky. Season to taste. |
Variations |

• Add chopped zucchini or mushroom stems when you add the onion. |
• To make it spicy, add hot pepper flakes. |
