Use this marinade for almost anything including vegetables or just add a spoonful to soups or pasta dishes. This marinade was part of a larger recipe in the cookbook Gran Cocina Latina; that recipe didn't work out, but the marinade was terrific. This marinade was more flavorful when used on chicken breasts than on the dark meat of the chicken. I'm not sure why that is. Marinate up to 12 hours. Even though there is vinegar in this, I did not find the chicken texture affected by such a long marinating time.
